Stéphanie Le Quellec likes to dot the i's and cross the t's: meaning she has a keen eye for detail and precision when it comes to reinventing traditional French cuisine. And even though the "i" in "miam" (French for yum) has disappeared, the Chef envisioned MAM as a perfect awakening of the senses.
